Sipping Liquor subscribers have received our first ever delivery this week. We're very proud to feature Koval bourbon, all the way from Chicago. Here's an interview we conducted with the president and co-founder of the Koval distillery, Sonat Birnecker Hart.
Koval's bourbon is single-barrel and organic. It contains an unusual mash bill of 51% corn and 49% millet. Husband and wife co-founders Sonat and Robert Birnecker pioneered a technique of only using the heart cut of the distillation in their whiskies, following the tradition of Austrian brandy makers.
